I found myself wishing for a bit more prune, though, so I would probably add more if I made it again. Finally, add the shredded cabbage and beans to the broth and cook for about 7 minutes until cooked through. This book is a fine presentation of the most wonderful and distinctively delicate and flavourful (unfortunately lesser known) cuisine of Ukraine and beyond.

Finally, I used the beef short ribs, but they were pretty fatty and wouldn't be my choice next time. I always use butter and a teaspoon of vanilla extract; I've also made them with ricotta when out of cottage cheese, and it works beautifully. The recipes are a solid combination of bright and fresh, as well as home-y and warm, with a good variety of complexities levels as well. Most recipes I tried, I will add to my repertoire, but my favourites were the “Cold Beetroot Soup”, the “Armenian Soup with Lamb and Prune Meatballs”, the “Grilled Vegetable Caviar”, the Georgian Kidney Bean Salad”, “Chilli and Garlic Cucumber”, and the “Azerbaijani Rice and Fruity Lamb”. I have tried 9 of the recipes – all were really easy to follow and to make, and only one (the Stuffed Cage leaves) was not excellent – but I think that was down to me, not the recipe. Same sentiment here, absolutely love the combination of the beetroot with the prunes AND of the sour cream with the balsamic vinegar. This book is an ode to all those women (and men) that I was raised by and grew up with, and the food they lovingly prepared. I would certainly try it again – blanching the cabbage leaves a lot longer, and using a knife (instead of just a spoon and fork) to eat it. Don’t use any oil, and don’t preheat the casserole – this will ensure that the fat is rendered slowly.
