Established in 1684, Hacienda La Caravedo is one of the oldest working distilleries in South America. They still use hand-crafted small batch methods to preserve the authenticity of this national treasure.

Using copper pot stills, their pisco is twice distilled to squeeze out every last drop of spirit available. This process creates an extremely clean and crisp experience. This is a premium pisco that won ABA a gold award at the 2004 San Francisco World Spirits Competition. The oldest use of the word pisco to denote Peruvian aguardiente dates from 1764. [6] The beverage may have acquired its Quechua name from the Peruvian town of Pisco, once an important colonial port for the exportation of viticultural products, [7] which is located on the coast of Peru in the valley of Pisco, by the river with the same name. [8] From there, "Aguardiente de Pisco" was exported to Europe, especially Spain, where the beverage's name was abbreviated to "Pisco". [9]Pisco is an un-aged brandy that is made from fermented grape juice, then distilled to produce the final clear spirit. It was originally made by the Spanish missionaries during their time spent in South American in the 16th century. To earn the correct title ‘pisco’, this brandy can only be made in Peru or Chile and must be made only from fermented grape juice. How Is Pisco Made? a b gestion.pe (17 September 2016). Pisco sour, which originated in Lima, is prepared with egg white, lime juice, simple syrup, and bitters. The Chilean version usually has no bitters. [46] Peruvian pisco must be made in the country's five official D.O. (Denomination of Origin) departments—Lima, Ica, Arequipa, Moquegua and Tacna (only in the valleys of Locumba Locumba, Sama and Caplina)— established in 1991 by the government. The second of two aged piscos in this review, Waqar Pisco Anejado Heron is limited edition and was released to celebrate the 60th anniversary of French importer La Maison Du Whisky.

Chilcano (Pisco and Ginger Ale), it has variations with lime, blood orange, grapefruit, and pineapple. This pisco was a made using a blend of Muscat grapes; Alexandria and Pink Muscat, and double distilled in copper pot stills. The resulting spirit is then aged for 6 years in American oak casks which provides additional flavour and depth while still retaining the classic pisco fruity notes. Peru claims the exclusive right to use the term "pisco" only for products from Peru, [ citation needed] but they have not generally been able to persuade other countries to adopt that interpretation. Chile, in contrast, regards the term "pisco" as generic, and it argues the spirit is simply a type of alcoholic beverage made from grapes (as in the case of whisky and vodka). It cites the name being used to designate a similar grape brandy produced in both countries and maintains two regions of Chile, Atacama and Coquimbo, that it authorizes to use the term. [33] There could be a simple answer to this, but it’s become political and complicated. “Chilean and Peruvian piscos are different enough to say ‘we can both use this term’” Eric continues, “They are grape distillates that are largely unaged, but with different rules around grapes and uses. The same way Cognac and Armagnac are different for different reasons. You could easily give this info to the public. But, some brands and countries are fighting over the word and then there is a conflicting message.”
